Toffee and caramelized nuts

Néstor and Adrián Lasso, representing the third generation of their family’s coffee-growing heritage. After achieving international recognition for their high-precision anaerobic fermentations and rare varietals at El Diviso (often showcased by champions in World Coffee Competitions), the Lasso brothers established La Planta as an expansion and community-scaling initiative.
Rather than serving as just another single estate, La Planta is the Lasso family’s centralized wet-milling, processing, and drying hub. It allows them to apply the same rigorous post-harvest protocols (thermal shocks, anaerobic macerations, yeast inoculations, controlled mechanical and parabolic drying) to cherries sourced from their extended family plots, allied neighbor farms, and younger regional growers in Bruselas.

La Planta is a centralized processing and drying hub in Bruselas, Huila, run by brothers Néstor and Adrián Lasso of Finca El Diviso fame. It applies their competition-grade fermentation and drying protocols to regional harvests, standardizing quality and securing specialty market access for dozens of allied local smallholder farms.

Recommended Brewing

Use classic espresso settings for this coffee, closer to 1:2.5 is the best. Get more sweetness and fruits by grinding slightly coarser and reducing the pump pressure. Use larger baskets and coarser grinds (22-28g) to get even more sirupy espresso

Classic 1:16 pour over on a standard paper with a medium grind and soft water at 95c makes a great all day coffee
